If you search “Buddha Bowl” on Pinterest, you are sure to come up with thousands and thousands of ideas. These bowls are actually just grain and vegetable bowls with a fancy name. Buddha used to eat out a bowl filled with food from villagers who could afford to spare some. It was usually very simple and healthy food, thus, the “Buddha Bowl”.
For these dinners, I’m basically using whatever veggies and grains I have on hand. This is great for the end of the week when you don’t exactly have what you need to complete a recipe but you still need to feed your family!
Keep it super simple. Keep raw what you can keep raw an use leftover roasted/steamed veggies, even leftover grains from the week work perfectly! Even if you have to cook some things, I will not be a hard meal the throw together.
John likes to eat his without sauce or dressing usually and I like dressing. Here are a few different combinations to get your brain moving on what you could create!

-Wild Rice
-Lentils
-Leftover sweet potato gnocchi

-roasted/raw chickpeas

-lettuce
-sunflower seeds

-Broccoli (raw, steamed, roasted)
-Cauliflower (raw, steamed, roasted)

-Black Beans
-Quinoa (cooked plain or baked up like “taco meat”)

As you can see, the possibilities and combinations are really endless. You can theme the bowls (Asian inspired, Southwestern, etc) or just randomly throw things in that sound good to you! Don’t overthink it 🙂
