This morning I was up bright and early because John got up to go to the gym at 5:45 (it’s criminal). I was planning on catching some more z’s, but he proceeded to tell me how he thought there might be a critter in our attic, so I couldn’t fall back to sleep! So, downstairs I went! Luckily, I really don’t think there is a crazed animal in our attic (I hope at least), but John is going to check it out tonight; fingers crossed!
Anyways, after eating breakfast without any tiny people (ahem, Alex) trying to mooch my cereal and drinking (most) of my coffee, Alex was up and ready to go! After he and daddy ate, I finally got around to making another batch of applesauce. Woot! Alex loves the stuff. It goes on EVERYTHING. Hey, whatever gets him to eat his veggies! Making applesauce is so easy ever since my mother-in-law got me The Apple Machine. It has to be the greatest thing ever. It beats the heck out of peeling apples with a veggie peeler then trying to slice and core the slippery little suckers.

This little trinket peels, cores and thinly slices the apples up which makes my life so easy! Guys, if you don’t have one, you need one! I wouldn’t mislead you! But you need the one that suctions to the counter because it just makes more sense. This is on Amazon for $16.99. Can’t beat it! And I just saw a picture of it peeling and slicing potatoes! Genius!
I just plopped 3 lbs of apples and 3 pears (don’t tell John) in a pot with a few tablespoons of brown sugar and a teaspoon of cinnamon and let it work it’s magic! After an hour or so I use a hand mixer to smooth it out a little bit. If you wanted it smoother, you could use a blender. That’s too many extra dishes for me!

That’s not actually true. He pulled all of the towels out of the bottom drawer and tried to pull the garbage can over. He’s such a big help in the kitchen!
Yesterday, Alex and I took advantage of a semi-warm day and clocked 5 miles! Alex is such a trooper when we run. Although, its not very motivational when your training partner sleeps through the last 3 miles!
Now, we are off to visit daddy at work! Have a great afternoon!
